Asparagus is one of my favorite vegetables. So in this episode of In the Kitchen with Matt, I will show you how to cook asparagus. Asparagus is super healthy for you, it goes great with a piece of chicken, or pork, and many other things. It is easy to make so let's get cooking!

Asparagus (washed and dried)
Olive oil
salt
pepper
garlic powder
crushed red pepper (optional - for some kick)

Hello and welcome to in the kitchen with matt. I am your host matt taylor. Today I am going to show you how to cook asparagus. I love asparagus it is one of my favorite vegetables. Let’s get started. For the tools and the ingredients, I am using a grill pan, but you can use a sauté pan if you like, I have a knife, I have a pan here, I have a cutting board, I have olive oil, salt, pepper, garlic powder, and the star of our show, the asparagus. First what we need to do is cut off the ends of the asparagus. It’s woody and its not very appetizing, it doesn’t taste very good. Just go ahead and cut off an inch and a half to two inches worth. So what I do is I just line them up with my fingers like that, Go ahead and cut them off about that much. And now what we do is we take our pan and we put in the asparagus like this. Okay let’s go ahead and drizzle in some olive oil there, not a whole lot, just a little bit. Ok. Then we will add salt, a generous helping of salt, pepper, and a couple shakes of garlic powder. And you could use fresh garlic if you are going to use a sauté pan. But when I use the grill pan I just use garlic powder. Ok, then you will go in here with your fingers, and mix it all around, like this, just so it gets coated with all the seasonings and with the olive oil. Ok, and now we go ahead and put our pan on the stove and heat it up on medium high. All right once our pan is nice and hot we will come in here and add our asparagus. Like that, and then we will cook it about 3 minutes per side, it is not going to be exact. And what will happen is that the asparagus is going to turn a dark green and it will get some grill marks on there, and it will get a little bit limp once it is ready. Ok and what we will do is go in here and turn them a little bit, get some nice grill marks on there. All right these are done, they have shrunken in size a little bit. They are a little bit limp; see it is a little limp. Go ahead and take these off the grill. All right our asparagus is done. It was really easy to do; if I can do it you can do it. One thing to note, if you want to do this on the barbeque grill do the same exact method that I did, and just cook it on the grill, easy as that. If you want to do it on a sauté pan, that’s great, just prepare the asparagus, add a little bit more oil, and use fresh garlic, that will help, and if you want a little bit of a kick, add some crushed red pepper to kick it up a notch. Have you ever had the chance to eat wild asparagus ? People pick them here in spring. They are much thinner, but taste is so much richer, the commercial ones I tried are tasteless in comparison.

Thanks Matt, Going to try this tomorrow as side with Easter dinner....just a thought. What about putting a little butter in the pan with the asparagus?
