try having some four hook gangs for longer baits to fully cover the tail. That was how I started with gars before pillies became so commonly used,

What size gang hooks do you recommend, sometimes mine aren’t big enough for the pilchard and it doesn’t hook through properly

And then the pillies mouth opens and it gyrates in the water scaring the fish unless they are in a feeding frenzy.

Better to move the second hook around towards the belly a little so the point comes out more towards the back of the pillchard, then it's easier to put the last hook up under the chin and out the top of the head which keeps pillies mouth closed...no gyration!
Line up the hooks first as shown to get it just right, if the last hook is just forward of the eye it works even better.
(Cut off the tail for better hook ups without needing trebles, and for much better casting distance with an unweighted rig. Which used to be called 'baitcast-ing'!)
