RECIPE

INGREDIENTS:
* 1/2 cup plant milk
* 1 cup cooked cauliflower
* One dash of tumeric
* 1/2 teaspoon salt
* 2 teaspoons corn starch (or arrowroot powder or tapioca flour)

INSTRUCTIONS:
1. Steam cauliflower for about 8 min on high heat.
2. Add all other ingredients to blender, and add cauliflower once soft and done steaming. Blend well.
3. Pour mixture into a pan on medium heat and reach a quick boil to thicken. Once boiling, cook for 1 minute more. Then, turn off the heat. Allow to cool. Done! Easy peezy!

Another great fat free "butter" spread... Put 1/2 cup cornmeal, salt to taste, a little nooch if desired, a dash of turmeric for color, + 2 cups of boiling water into a high speed blender and blend on high for 3 minutes. Once it cools below 110 F, stir in 1/4 cup of plant based yogurt and chill. It thickens as it cools and makes a great spread, or can be thinned with milk as a "melted" addition to veggies.

What a great idea! I have frozen riced cauliflower. I wonder whether riced cauliflower will blend the same (and be as smooth) as cauliflower kernals?

I think there's a lot of fat in almond milk. Have you tried it with homemade oat milk? That is just made from oats in water, so it's fat-free.
