Recipe:
Strawberry Shortcake Bars
Makes 8

VANILLA ICE CREAM
8 large egg yolks
¾ cup granulated sugar
½ teaspoon kosher salt
1 tablespoon vanilla paste
3 cups whole milk
1 cup heavy cream

1 pound strawberries chopped, mixed with 2 tbsp sugar, roasted at 275 for 1 hour, stir a few times, blend in to half of vanilla base and flavor with 1 Tbsp hibiscus powder and 20g freeze dried strawberries, strain, process

SUGAR COOKIE CRUMBS
1 stick butter
½ cup sugar
1 teaspoon baking powder
¾ teaspoon Diamond kosher
2 tablespoons egg whites, from about 1 egg
1 tablespoon heavy cream
1 teaspoon vanilla extract
150g all-purpose flour

STRAWBERRY VERSION
1 stick butter

From an oil painter - the Hibiscus powder very much has a cool hue to it, meaning that it's a cool red or reddish purple hue without the tint, not a pure red. Adding it to anything would increase the coolness of the tone. Adding it to the strawberry cake certainly in this case aided in making it mauve. Pure strawberry would've been more successful in keeping it warm pink.

My younger brother passed away a few springs ago. For his first birthday after his passing, I decided to make an ice cream cake as it was always his favorite. I remembered us eating these strawberry bars as kids, and I took it upon myself to make a round cake version of this popsicle stick treat. I spent all day making and freezing the layers (freeze-dried strawberries, crushed golden Oreos, vanilla and strawberry ice creams, etc), and my family gathered around to eat it in his memory. Thank you, Claire.

My trick to cleaning my coffee grinder is to grind uncooked rice in it. It really helps pull out all the oils!

For anyone wanting to use their coffee grinder for other things: I've had success with cleaning old coffee grounds out of my grinder by cleaning it well with soap and water, drying it, then grinding some uncooked rice which will help grab and dislodge fine coffee particulate in hard to reach places as well as grab some oils. Then clean once more to get rice powder out. No detectable coffee flavor after that! Eventually I picked up another coffee grinder from a free pile and keep one for coffee and one for everything else.
