It’s a macerating method. One of the best ways to use an over abundance of strawberries. Then you can take the juice, add it to a pot appropriately sized for the amount you use, bring to a boil, add a bit of tapioca starch (or corn starch slurry) and cook over a simmer until thickened. It’s perfect as an ice cream topper, yogurt or oatmeal stir in, filler for a fresh strawberry pie…

a cup of that, a cup of lemon juice and perhaps a little water to cut the sweetness and you probably have one hell of a sorbet

I believe you could definitely freeze it for later use. I’ve done it with just strawberries and sugar and it lasted a few months in the freezer.

Fun fact: DQ uses a similar recipe for their strawberry sauce. No lemons and more sugar. We've been making this for years... we cut the sugar down to 1/3 cup. The sugar dissolves in like 2 days, tops. We use it for icecream (it freezes really well)
