Hm, ... be careful, both vinegar as well as lemon juice might ruin plastic coatings as well as they might damage marble. Just that a substance doesn't look like a chemical doesn't mean it can't do any harm. Try vinegar on weeds for instance.

Unless the wood countertop is raw, uncoated wood, you’d be cleaning the coating, not the wood. Given how it’s used, it’s likely to be coated, probably with water-resistant polyurethane, like a hardwood floor.

Olive oil contains unsaturated fatty acids which oxidize and become rancid, especially in the presence of air and light. You’ll soon end up with a greasy, smelly countertop if you apply olive oil to it. If you want to oil wood, like, say, a cutting board, salad bowls, or utensils, use mineral oil, found in the laxatives section.
