I tried the same (before watching this video) just after the lockdown started and this works very well. In 20 25 days you are all set to harvest baby spinach leaves for cooking use. Not just spinach, but i tried the same for methi (fenugreek) and soya as well and it was a success. Just remember to gently push the soil after planting roots so it removes any air gaps around the roots. I am planning to try it now for mint. Just that Dhania (coriander) for some reason didnt grew as expected.

You can even do it hydrponically = put the roots in water + diluted fertilizer. You don't have to use hydroponic fertilizer, any will do (just make sure you dilute it twice more than when you put it in soil, or even more for the first test).
