Chicken Fried Rice Recipe:
Basmati Rice - 1 Cup
Salt - 1 tsp
Oil - 1 tbsp
For the Chicken:
Chicken (boneless slices) - 200 grams
Salt - A Pinch
Soy Sauce - 1 tsp
Black Pepper Powder - ¼ tsp
Cornstarch - 1 tsp
Other Ingredients:
Oil - 1 tbsp + 3 tbsp
Egg - 2 nos
Salt - A Pinch
Garlic (finely chopped) - 1 tbsp
Ginger (finely chopped) - 1 tsp
Scallions (white part of Spring Onion) - ½ Cup
Carrot (chopped) - ½ Cup
Cabbage (chopped) - ½ Cup
Beans (chopped) - ½ Cup
Sugar - ½ tsp
White Pepper Powder - ½ tsp
Soy Sauce - 2 tbsp
Chilli Sauce - 1 tbsp
Salt - 1 tsp
Spring Onion (chopped) - ¼ Cup
Cooking Instructions:
1. Wash the Basmati rice and soak for 20 minutes.
2. Bring a pot of water to a boil. Add salt and water. Add the soaked Basmati rice and cook for 5 minutes.
3. Strain the rice and spread it on a plate or tray. Allow it to cool. This prevents the rice from sticking to each other.
4. In a bowl, combine the chicken, soy sauce, black pepper powder and cornstarch.
5. Heat a wok and add 1 tbsp of oil. Add the eggs along with a pinch of salt. Scramble it and remove it from the pan.
6. Add 3 tbsp of oil and add the chicken, leaving space between each piece. Cook it for 3 minutes and remove it from the pan.
7. In the same pan, add the garlic, ginger and scallions. Saute and then add the cabbage, carrot and beans. Add sugar and saute for 1 minute on high heat.
8. Add white pepper powder, soy sauce and chilli sauce. Mix well.
9. Add the cooked rice, eggs and chicken. Toss until evenly combined. Add 1 tsp of salt.
10. Allow it to cook for 2 minutes, tossing occasionally.
11. Add the spring onions, toss and remove from the heat.
Cooking Tips:
1. You can cook the rice up to a day in advance, spread it out onto a flat tray and store it in the refrigerator. You can use it directly for the fried rice later. This is the method used by most restaurants and gives the ideal texture for the rice.
2. The level of salt might differ according to the brand and type of soya sauce used. Taste the rice after adding all the sauces, and then add in the salt for an accurate taste.
