Pickled Vegetables without Oil ! 10 minute Recipe

Can we replace sugar with something healthy? And lemon instead of vinegar ? Which all spices have you used here

Use veggies like carrots, cucumber, chillies, garlic (You can also add beetroot, onions, radish to this)

For the brine -

2 cups Water
2 cups Vinegar (Use apple cider or white vinegar)
1 & 1/2 tbsp Salt
1 tbsp sugar
Some spices - Coriander seeds, Black Pepper, Fennel & Yellow Mustard Seeds 1/2 tsp each
You can also add dill leaves to this.

Clean your jar with HOT water & wipe it dry.
Cut the vegetable & fill it in the jar compactly.
Make sure the brine is HOT & fill it until it cover the veggies completely
Lid the jar & leave it at room temperature for 12 to 16 hours & then open the jar once. Then leave it in the fridge and use it.
This pickle tastes best after the 3rd day.
