How to Make Delicious Eggplant Lasagna Recipe at Home

INGREDIENTS
2 eggplants
3-4 tablespoons of olive oil
1 teaspoon of salt
½ teaspoon oregano
2/3 teaspoon hot pepper
1 onion
2-3 cloves of garlic
Olive oil
1 red pepper
Salt and pepper to taste
300g minced meat
½ teaspoon cumin
1 teaspoon ginger
1 teaspoon of oregano
2-3 tablespoons of tomato paste
150 ml of water
150g mozzarella
RECIPE
Cut the eggplants into slices about 1 cm thick. Mix the oil with the salt, oregano and hot pepper. Place the eggplants on the baking tray, brush with the oil mixture and bake in an oven heated to 200 degrees for 40 minutes. In the meantime, prepare the filling. Chop the onion and garlic cloves. Fry in a small amount of oil. Cut the red bell pepper into cubes and add to the pan. Sprinkle with salt and pepper and fry for a further 1-2 minutes. Add the minced meat, spices, tomato purée and water and simmer for 10-15 minutes.
Spread the filling on the slices of eggplant, top with mozzarella and repeat 2-3 times. Sprinkle with oregano and place in the oven for 10-15 minutes until the cheese has melted.
