Looks delicious!! Some changes I would make personally:

I would peel the eggplants, and use a mandolin or other slicer to make sure all the slices are even thickness

For the sauce, I would:
Add a bit of olive oil (and butter!!) To the pan, then onions just like you did, but I'd then add the seasonings: Italian herbs, black pepper, chili flakes, paprika for a hint of smokiness, then also add a few cloves of crushed garlic.

Next add a tbsp of tomato paste and let the rawness cook out, and here's my secret ingredient for umami: mushroom/chicken powder, or a stock cube. (Sometimes I toss a few regular mushrooms into a chopper and put them in with the onions in the beginning and let them brown, it's SUPER good)
I add that in and mix it with everything before I add the meat, and then once the meat is cooked and browned I adjust for salt and other seasonings before adding the sauce from the jar.

It's a few extra steps but it tastes 1 billion times better

Looks really good I know there are some people that like it without the meat. But what happened to the ricotta cheese? Definitely a short way of making it. I will definitely try thank you for sharing!
