THE BEST-EVER GUACAMOLE
Makes about 2 cups
Prep Time 5 minutes

1 tsp ground cumin
1 tsp ground coriander
2 ripe avocados, halved, stone removed, peeled
½ red onion, finely chopped
1 birdseye red chilli, seeds removed, finely chopped
¼ cup finely chopped fresh coriander
2 tbs lime juice
Corn chips, to serve

1. Toast the cumin and ground coriander in a frying pan over medium heat for 1 minute or until aromatic. Transfer to a bowl. Add the avocado and mash until smooth. Add the onion, chilli, fresh coriander and lime juice. Stir to combine. Season with salt and pepper and serve with corn chips.
