Another idea to make the soup more hearty is to chop up the broccoli stalks, sauté them in olive oil and/or butter (you can also add a small onion and some baby peppers), put them in a blender with some of your liquid, blend well, then strain (or not) the mixture back into the soup. This makes it thicker and recovers the nutrients from the stalks that would have been thrown away. If it’s too thick, just mix in a little water.

Dont waste money buying chopped broccoli. If you have time to make this recipe, you have time for 1 minute of chopping it yourself.

just made this soup with a few adjustments:
first I used a frozen bag of brocolli, cauliflower, and carrot mix.
then I diced half an onion and threw it in.
I also added half milk, half heavy cream for the dairy part.
I also seasoned with a big of garlic powder.
soup is delicious, can't wait to eat it tonight.

I made broccoli cheese Soep today... .. super delicious. I made mine a bit spicy by adding a little cayenne pepper in it.
The healthy part is that I used rice flour instead of all purpose flour. And just a little butter. And added just 1 cup Gouda cheese.
No Cheddar for me!!!!
And a lot of broccoli 😋😋😋

This recipe is for a HUGE crowd. I improvised and scaled it back and still had too much. The soup is delicious, very rich and creamy, I stuck to the recipe except for the chicken broth, I simply used milk in its place. If you looking for a good creamy soup and not so worried about the health aspects, try it out! Absolutely worth it

I made this tonight. It's just me, so I quartered the recipe and have enough left over to freeze for another meal. I also used Monterey Jack instead of shredded cheddar and I used more chicken broth than milk and it still turned out very creamy. Delicious! Also, a nice crusty baguette was the perfect complement.

*Ingredients*

2 heads broccoli
Salted water (2 min boil)

3/4 cup butter
3/4 cup flour (Rue)

9 cups chicken stock
9 cups milk
1 t salt
1 1/2 t white pepper
1.5lbs processed cheese
3 cups shredded cheddar cheese

About 18-24 servings

To substitute cornstarch for flour, you would only need half of the amount used in this recipe. Basically half of 3/4, or 3/8. Hope that helps. :)

Thanks for your question, Puneet Bsanti. If you don't have white pepper, you may substitute black pepper. White pepper is used in this soup so it blends into the creamy broth and you won't see little black specks. Add the pepper slowly and taste as you do so as not to add too much. Enjoy the soup!
