Chemistry Teacher here! If anyone is curious on the science behind this, continue reading. When adding water to the kosher salt, you are dissolving the ions in salt into Na+ and Cl- (sodium and chloride ions which are free flowing in the water.) Over time, as the water evaporates you will cause the Na+ and Cl- to ionically bond again. It’s critical to not agitate the solution, as you will disrupt the recrystallization process. The end result is larger salt (aka flaky salt.) If you want your salt to be even more flaky, make sure that you add even more salt to the part where the salt water is boiling. You are affecting the solubility rate of table salt by increasing the temp of the water meaning you can put more salt in (this is known as a supersaturated solution.) Then as normal, let the hot salt water solution evaporate slowly over time. This way, you can get really large crystals. This process is similar to how rock candy is made!
