From my experience always look at the ingredients and if you have the choice buy the ones that only have tomatoes and salt in it, those are much less acidic.

Reconstituted does not mean re-used. It means water or some other liquid was use to rehydrate something that was dried. You normally see it when dried mushrooms are soaked in warm water to soften them up or when dried chiles are soaked in hot water before turning them into some sort of sauce in Spanish\Mexican cooking. Those tomatoes were dried.

I’ve just recently switched to basically using Mutti everything (paste Passata tomatoes since DOP’s tough to find here, tomato sauce is now available near me) my family have noticed a nice difference in my sauces. Mutti seems to be a bit of a step up from the regular crap but it’s readily available. Very happy with it

Cucina Matese is a white label’d product that’s owned by Coles, it’s actually really good value for money and their dried pasta is also great

there are 3 important criteria in passata, one is the brix rating which will give you an idea of the quantity of sugars present in tomato passato (juice, sauce, puree) the other one is whether the passata was obtained by actually sieving tomatoes ( and by the way what are some of the " passata" in the video doing with seeds? if the tomatoes are crushed first the term passata means they are saved ) or if the passata is made by diluting puree (much cheaper but easily high content of sugars). The other one, mentioned is the acidity. A VERY important thing is that in some areas of Italy (namely Naples) people like a more acidic tomato passata (or any other product) which may account for the Cirio passata being more acidic. Generally speaking tomato product producers cater different products for different markets. Ideally one would als know the TYPE of tomatoes used. Pomodorinii, for example, give a naturally sweeter sauce (but is sweet always better?).

The only brand I have found in US (not near a big city) is Cento. It’s made in Italy, ingredients are tomatoes and sea salt (only), it’s smooth, and is only about $3.

Mutti is the brand I use for passata, tomato puree and tinned tomatoes.
