Luke warm milk- 150 ml
sugar -30 gm
ACtive dry yeast- 5 gm eggs-2
Bread flour(protein containt 12.5 %) - 400 gm
salt- 1/2 tsp
Unsalted butter- 40 gm

Step 1: Activate the Yeast – Warm 150 ml of milk (not hot!), add 15g of sugar and 5g of active dry yeast. Let it foam for 10-15 minutes. Foaming ensures your donuts rise beautifully.

Step 2: Mix Dry Ingredients – In a large bowl, combine 400g of bread flour with the remaining sugar and 1/2 tsp of salt. Bread flour adds chewiness.

Step 3: Combine Wet Ingredients – Add two room-temperature eggs to the yeast mixture, then mix with the dry ingredients.

Step 4: Knead the Dough – Knead on low for 4-5 minutes, then gradually add 40g of soft, unsalted butter. Knead for another 15 minutes until soft and elastic.

Step 5: First Rise – Let the dough rise in a warm spot for an hour or until doubled in size.

Step 6: Shape the Donuts – Roll the dough to 1/2-inch thickness, cut into donut shapes, and let them rise again for about an hour until puffy.

Step 7: Heat the Oil – Heat oil to 150-160°C for a soft, pillowy texture.

Step 8: Frying – Fry donuts for about 2 minutes per side until golden, then drain on a wire rack. Roll in sugar while warm or glaze after cooling slightly.

Final Tips: Keep milk warm (not hot) for yeast, avoid adding too much flour, let donuts rise twice for fluffiness, and fry in small batches for consistent results.

Just made these and they turned out perfect ☺️❤️ I ended up adding a bit more milk as I live in a very dry area and I think my flour had no moisture content at all, it turned out perfect with that little adjustment. ((I usually consider that in any dough recipe, moisture (flour/water ratio), can vary depending on the climate))
