I’m from Hong Kong, recently moved to Australia. This brought back good memories. You know the char siu is good when they come in styrofoam boxes and the name is something along the lines of “X記” and there’s a middle aged dude aggressively chopping char siu or duck in a glass display window surrounded by whole ducks

Personally, I would just use red bean curd instead for red 40. Also a pinch of Chinese five spice. Many Chinese restaurants "cheat" in this manner.

Char siu is my all time favourite dish, my nan & mum would make it together, marinade it overnight & then spend the whole morning cooking a bunch of stuff.
There was never enough char siu 😂😂
