So glad to finally see a recipe use maltose! I love to finish char siu with a maltose glaze, the sheen you get from maltose is unrivalled.
Also a drizzle of sesame oil before serving is amazing!

Add a lil bit of baking soda to improve the tenderness n it also absorb more flavor into the meat. Thank me later!

Can I ask.an honest America question..?.. Why red food coloring for the pork? I noticed it's an ..option for most pork recipes I've seen and was just wondering.... why red?

Would love to try this. Pls list separately the specialty seasonings found only in Asian food markets ie maltose, the Chinese 'something' powder etc. I'm asking to see if the produce store near me might have these.

You're never gonna get that maltose out of your airfryer. Just use the oven.
