Did you guys already plant kale ? If not, it's worth trying. I am coming from the north of Germany and frost is exactly what you need to harvest it (this rule possibly doesn't apply to newer types of kale). However, you may use it as salad base in the winter months:) but it really is important to massage the dressing into the kale really well. Generally, in the north of Germany we harvest and eat (mostly as stew) a lot of cabbage during winter (till January since most cabbage sorts can stand -8°C). That way you could enjoy fresh winter salads 😊 it's of course not the same as common salad recipes but you would still get some fresh greens.

Have you tried growing salad greens on a windowsill? Baker's Racks are ideal if you can find one in a thrift store. (My approach. You can buy new – but why?)

I just made up some food the other day because I didn’t know how I should eat my wild cabbage. I’ve left it growing for a year and the leaves have gotten so big that it started tipping over. So I made some cooked peppers, with garlic, caramelized onions, chicken seasoned with sazon, adobo, rosemary, and wrapped them in my cabbage leaves and at them like a sushi roll. It was delicious! My husband was hesitant about my idea but it came out amazing and he loved it too!

Are you processing the corn with nixtmalization ? It makes it much more nutritious and makes the tortillas come out right .. my family has been doing this ourselves for generations, becauae of our native mexican ancestry
