This is your go-to chicken kebab recipe if you're looking for something easy to prepare, and produces super juicy chicken with maximum flavor. The recipe is my version of chicken souvlaki with a little twist. I add greek yogurt to the marinade, which keeps the chicken tender as well as providing some "glue" for the seasonings to stick to as the skewers are grilled over a wood fire.

GRILLED CHICKEN KEBAB SKEWERS (SOUVLAKI)
(makes 4 skewers)
Chopped Fresh Parsley - a few Tbsp.
Chopped Fresh Oregano - about 2 Tbsp.
Fresh Lime Juice - about 1 Tbsp.
Garlic Paste - 2 tsp.
Greek Yogurt - about 1/2 Cup
Extra Virgin Olive Oil - about 1/2 Cup
Kosher Salt - 1 1/2 tsp.
Fresh Ground Black Pepper - to taste
Chicken Breast - 1 1/2 lbs.

SIMPLE TZATZIKI SAUCE RECIPE
Greek Yogurt - 1 Cup
Grated Cucumber - about 1/2 Cup
Chopped Fresh Dill - 1 to 2 Tbsp.
Fresh Lemon Juice - about 1 Tbsp.
Kosher Salt - about 1/2 tsp.

QUICK TOMATO SALAD RECIPE
(I just eyeballed all the ingredients to taste)
Small Tomatoes - halved or quartered
Red Onion - thinly sliced
Capers - crushed and coarsely chopped
Fresh Parsley - finely chopped
Red Wine Vinegar - to taste
Extra Virgin Olive Oil - to taste
Ground Black Pepper - to taste
Kosher Salt - to taste

It’s a small detail but I love how your background noise is actually background noise and not annoying music. The sounds of nature are a great soundtrack for grilling.

A little suggestion to try: add some good olive oil to the tzatziki for som extra olive flavor and punch. Makes a great addition to the sauce in my opinion. Great recipe, that tomato salad looks killer!

Tim, really nice demo! I like to add the juice from the grated and squeezed cucumber to the marinade for the chicken. Somehow it elevates the flavor of all the ingredients.
