If we use AI to design a simple torque measurement, can it guess the difference between two half bridges and a full bridge strain gage?

Indeed, the classic “windmill” full-shear gage is easy and convenient, but there is a trade-off. Oops!

The 125USA or 250USA full bridge does measures torsion but does not cancel bending like using two half-bridge shear gages, placed on opposite sides of the shaft and wired in a full bridge. Properly positioned and electrically connected strain gages can provide pure torque (shear) measurements and cancel the signals from unwanted inputs like bending and compression / tension.
