The Ultimate Mountain Man Breakfast Recipe

I've used this Dutch oven recipe for years at scout camps, family gatherings, and at home for the kids. Everyone's favorite breakfast casserole and very customizable. This one-pot meal uses 1 pound of ground breakfast sausage, one medium white onion, red bell pepper and roasted Hatch green chili, all diced. 3 medium Russet potatoes grated and well rinsed. A dozen eggs topped with 2 cups of Colby Jack Cheese. Baked for around 20 minutes over coals.
