Here in Florida we don't have any mountains so ours is alittle different. The bacon is cooked, removed from the pan and set aside. Next the Diced Onions and Garlic are sauteed and then removed. Then the hash browns are cooked. The onion & garlic is added back to the potatoes and everything is warmed up. The Eggs are scrambled in a separate pan with some bacon drippings and cooked. Everything gets a liberal dusting of pepper and salt. Sometimes we even have a pot of grits and those get the cheese for the guys that like cheese grits. .

Great way to do a 1 pot breakfast. Try cracking your eggs on a flat surface, it doesn’t force those little bits inside the egg, less shells when you put it in the pan

In Louisiana, we add diced onions, bell pepper to bacon to sautee, add diced potatoes, when potatoes are cooked, mix Ingredients, top with scrambled eggs, cheese, cover and cook till eggs are done. Italians call this a frittata. Cheers

Thing I learned from cooking with a cast iron and something my momma tells me, never go above medium heat. Now, I understand that it's hard to change the heat of a fire, but what do yah do? I don't know, don't ask me.
