Ginger Beer Recipe (Non-Alcoholic)

1 large knob of ginger
1 cup of sugar
1/2 cup of honey
1 cup of water
3 - 4 cloves of cardamom
1 star anise
2 - 3 whole cloves
2 lemons
1/4 teaspoon of instant yeast aka bakers yeast
8 cups of water

Grate the large knob of ginger and cook in a pot with the sugar, honey, water, cardamom, star anise, and cloves. Boil on medium or 45 minutes.
Strain the syrup and let cool.
Once cooled, mix together the syrup, juice of 2 lemons, instant yeast, and water into a large container.
Divide the liquid into pop top bottles and allow them ferment over the course of 1 week.
Once they have fermented, move them over to the fridge and enjoy when you want a cold carbonated beverage.

Been making ginger beer for at least 20 years. A little champagne yeast works. I like a jalapeno when I steep the ginger. If you don't want to wait for it to carbonate, just add a bit of ginger syrup to seltzer. I have a Soda Stream and add to that.

I tried this recipe (quadrupled because I wanted lots) and it is fantastic. I used bread machine yeast (not sure if that made a difference) and it was carbonated and ready to drink in 4 days. I left them out for another 4 days before refrigerating and they were even better. This is so easy and straightforward I would recommend for any beginner to the world of brewing/fermenting.

Yeast will always convert sugar or for that matter any carbohydrate into alcohol and CO2.

Yum, as a kid my falmily made it with ground ginger. Fresh ginger would be great to try.

Interesting. Where I live, the same technique used to produse the drink, called "kvas". Although dried and even chared pieces of bread used as a base. It comes out teasting great and tames the thirst perfectly, but has too many calories))

I may try this in one of my idle 5 gallon homebrew kegs. I think ginger beer would be very refreshing in lste fall through winter when working outside in the cooler weather.

Oh can we please have root beer next. Been trying to get my husband off the 3 PM cola for years!!! Seems like RB might be a good transition.

You can make it with just Ginger sugar and water, put 8oz of fresh ginger through a cheese grater, add it to a gallon carboy with 8 oz of sugar and top it off with water. Let it ferment until it's your desired level of residual sweetness and then bottle it to carbonate. No yeast required

As a Coca-Cola lover that hit was personal 😂😂😂😂 however, what I would say was we make home made soda all the time ginger being a top choice. Try hibiscus 🌺 + ginger + sugar + pineapple + fresh mint is also a tasty option for a homemade soda. To make these just boil as above and sieve the content as shown, store in a glass bottles in a fridge or freezer.

I tend to see this in a lot of videos that feature ginger beer where the soda just flies out of the bottle when you first open it because people are doing fermentation in bottles. It might be worth trying to make your sodas in a larger fermenting vessel with an airlock/bubbler valve and then bottle it after its done fermenting to preserve the CO2 carbonation. It also seems a bit safer because then you don’t risk exploding bottles either.

Best not to heat the honey, and to add it near the end before fermentation.

Was the bottle shaken or something or was that pressure all built up just from the carbonation? I would've thought you'd need a pressure release valve to prevent the pressure from building up too much and possibly causing the bottle to explode.

EDIT: Also, is there a reason why you don't want to bring the mixture to a boil or simmer it for a bit?

Using this as a guide you can probably make this in any flavor. Curious how a mango version would taste. 😋

Traditional Ginger Beer does not contain additional yeast, the yeast lives on the ginger, just like on grapes. Simply dice ginger (ORGANIC) and feed it sugar water until active, then feed it like a sourdough, when it's active, fill it in a bottle and close it for carbonation.
