Here’s how I made it:

- Roughly 1 ‘hand’ ginger (palm size), roughly chopped
- 6 cups filtered water, divided
- ½ cup maple syrup, sugar, or raw honey
- ¼ cup fresh squeeze lemon or lime juice
- ½-3/4 cup active ginger bug liquid

1️⃣Add the ginger and 1 cup of filtered water to a blender and blend on high until fully combined. Strain out the pulp. Mix the ginger liquid with the remaining 5 cups of water, the lemon juice, and the maple syrup. You can taste this and adjust the flavors as needed.


2️⃣Add about 1/4 cup of active ginger bug liquid to each of your fermentation safe flip top bottles. Then fill with the ginger tea liquid.


3️⃣Seal and let it ferment for a few days in a warm spot out of the sun until you’ve achieved your desired flavor and bubbles. Be sure to check on them daily and burb the jars a couple times / day to avoid explosions.
