How to Make a Spiced Chai Mix

INGREDIENTS:
3 cups water
2 cups milk
2-3 teaspoons of your *chai mix
2-3 teaspoons black tea, such as loose leaf Assam
(avoid mass-produced/bag tea unless absolutely necessary, imo it’s always disgusting in comparison)

*CHAI MIX:
-Fennel seeds (Saunf) ~1/2 cup
-Carom Seeds (Ajwain) ~1 TBSP
-Clove (Long) ~1 TBSP or ~20 pieces
-Green Cardamom (Sabz Elaichi) ~1/4 cup
-Cassia Bark/Chinese Cinnamon ~20 pieces ~1in long (Bark is stronger than common cinnamon sticks, so about 6-7 of the ~3 inch sticks, break in half)

OPTIONAL SPICES:
-Star Anise (tastes like black licorice) 2-3 stars, its pretty strong
-Ginger or Galangal (Galangal, or thai ginger, is stronger and spicer than common ginger) ~1 TBSP size, peeled ginger chunk
-Whole black peppercorn (my personal preference, adds a spicy kick) ~2 tsps of pieces

(use mortar and pestle for stronger flavor, only if you’re making tea that day, store as whole pieces for later use)

STEPS:
1. Throw your chai mix and black tea in a pot with 3 cups of water
2. Bring to a rolling boil and let it continuously boil for about 2 minutes (you can boil it longer for a stronger, more bitter flavor)
3. turn heat down to simmer then add 2 cups of milk and sugar (don’t add milk super fast when it’s REALLY bubbling or it might boil over)
4. stir for a few seconds to dissolve the sugar and let it simmer for 5 mins, then **aerate it if you want, and enjoy! (Iced or cold tea will not be as spicy or flavorful, but if you don’t like super hot drinks, such as myself, 120° is a very comfortable drinking temp to let it cool to)

**AERATION:
pour in pitchers or cups back and forth about 15 times, as shown, or blend it in a blender or mixer, your just bringing more air into it

I used to do housework for an Indian lady and she would always make Chai before I cleaned for her. The entire apartment smelled so gorgeous! Very excited to try this recipe 🌸

My holy grail chai mix for anybody who wants to try. Now this is something I like, so please adjust accordingly. For making one cup ie around 200 ml of chai, you need:

1 big sized green cardamom pod
4 black pepper corns
2 cloves
1 very small piece of cinnamon, too much of it tends to sweeten the tea. Also use the Ceylon cinnamon that's curly and not cassia.
A grating of nutmeg
A small piece of fresh ginger root

Pound all these together and keep it aside.

Now, I use a 1:1 ratio of milk and water. So first I boil the water and then add the pounded spices first. After 30 secs add a heaped teaspoon of black tea. Now let it boil for a few minutes and once you get the desired colour, add the milk. Boil again but no more than 5 mins, longer than that will make the chai too strong and bitter.

Strain, add sweetener if desired and drink up. I prefer powdered jaggery or palm sugar. Drink it HOT and say Aahhh after the first sip. That is mandatory.

Note: Do not use expensive black teas for Indian chai, because the high heat and long boiling time will destroy the delicate flavours and notes of the tea. Just a basic black tea will do. Assamese or Orange pekoe is gold standard for Indian chai.

you should toast the spices and grind them. this makes it so much easier. also toasting the spices brings out the flavors. :)

Thanks for sharing this recipe, I will give it a try sometime. I suggest always adding black peppercorn for sake of bioavailability of the nutrients within all those medicinal spices. It is not added for flavor. Cloves, ginger are coriander are high in selenium which peperine helps to absorb into our systems.
Use black pepper always with seafood/fish also since its high in coenzyme Q10 which pepper helps absorb.
Add Pepper to citrus fruits when sick to help absorb more of the vitamin C.
Add to turmeric when making curry to get the most out of the curcumin present.

I use this exact recipe for my chai but it is time consuming getting out all the ingredients and I do simmer for quite a while. I really like mine strong and spicy. I had to research to find the right amount of ingredients and everyone does it differently so it depends on preference. Love this video as it's so simple and shows that masala chai can be made with ease. Now I want to make a cup!

Also, anyone else reminded of Naruto?

Genius! That’s actually a really clever way of utilizing spices but tbh I like my tea different depending on my mood/situation. Everyday, I need to have some Cardamom in my tea but maybe I’ll stay away from cinnamon. Cloves are a necessity and so are fennel seeds but my brother doesn’t like them so I usually don’t make Chai with them. Especially fennel seeds.

I make a very large batch of chai every month, which I reduce down for ~1hr so its really concentrated, then pour into ice cube trays and freeze. Whenever I want a chai, I then drop an ice cube of chai into a cup with a little condensed milk and pour over hot milk. Works perfectly <3

Ginger is as important as the other dried spices to call it an actual chai. So maybe not treat it as additional ingredient. You also do get dried ginger or dried ginger powder which you can add to this spice mix so it's not an additional hassle.
