I can only eat 13 foods, so I wanted to try to make a cake. Making my first birthday cake in 8 years using the foods I can eat.

Hey! A little advice for next time you bake a cake, you can peel and shred a cucumber and put it in the batter to make it more moist, kinda similar to a carrot cake but with cucumber, I promise it doesn't affect the taste so much and it could give you a more cakey texture.

Is there any way to get the water lilly seeds into a finer powder? Getting it down to the really fine texture that other flours have may give you an option for stuff like battering and frying things. Maybe with a food mill or a spice/coffee grinder? I know people are generally big fans of fried zucchini, and fried fish could be a game changer in terms of adding texture to your food.

Could you potentially bake the water lily seeds mixture into chips?
Possibly a dip if mixing finely grounded water lily seeds and olive oil into a paste and season with lime, salt and pepper?(don't recall if you could have pepper)
Might need trial and error to get it right if it's possible.
Also ever tried dehydrated zucchini chips?

Have you tried using pear skin to add pectin to your jam? Pectin makes jam thicken and pear skins are relatively high in pectin. I wonder if you cooked for longer on lower heat with the peel from a few pears in the pan (then remove the peel at the end) if it would give you a more jelly like jam.

Is there any type of milk that you can eat? You could make "dulce de leche" mixing dates and vegetable milk and then cooking it on the stove until it thickens (takes a while). Just look up dulce de leche made with dates.

Omg. Look up watermelon cake!! You can make it from cake sized slices of melon it’s so gorgeous!! I’m very sure you could make something with that now you can have it!!

I used to make date caramel by blending prehydrated dates without the water I sank them in. It helps creating a creamier and thicker texture that you can add on your cakes without it dripping hehe

Hey just a thought, perhaps buy some freeze dried green beans as a snack but also to pulse into a flour/powder as a binder. I would assume it would work similarly to a pea protein powder that people use as a flour replacement. Just a thought, might give you more versatility. You could even try mixing it with olive oil, salt, date syrup, water, and make it into muffins or even as a cracker /bread.

Have you tried whole dates, with date caramel filling and/or coating, and maybe some salt, or even some crushed up water lilie seeds? I would have had them frozen myself 😊 I make with peanut butter and sea salt, so it was just an idea from what you can have. Raspberry jam filling in the dates could probably also work 😊 Maybe you are already doing it, and I am late to the party 😂 I also make my jam with chia seeds, but the way you do in the video works also 😊
