Corned beef hash always been a favorite for me. Just boiling it in a pot with cabbage and vegetables the finishing it up by baking it the rest of the way is amazing. A nice basic flavor no brining needed for me. I enjoy the base taste of the meat.

My grandmother always weighted her corned beef down with a metal skewer, that was weighted on either end, to avoid that patch you ended up with.

I highly suggest it.

Oh my god my it’s literally the favorite of my family 😂 funnily enough you’re right the (actual) Irish people have never had it but us Irish immigrants now love it!

Fun fact: Most Irish food back in Ireland used Bacon, since they couldn’t afford beef most of the time. Beef was a luxury, as the English usually owned most of the more expensive cattle and used it themselves.

Yet, the Irish in the states enjoyed Beef at a relatively low price. Many Irish dishes in the US can be considered “Premium” since they used more expensive ingredients back in the day. Corned beef is Largely an Italian Irish food, as mainland Irish stuck to Lamb and Bacon.

My dad used to make corned beef all the time. He grew up in the great depression and it was a staple dish for his family.
