Air is huge, huge factor in ice cream as well. Less air means a heavier and hard ice cream (take Häagen-Dazs) or more air making it lighter and softer (take Breyer’s). The latter is infinitely better than the latter…

I really liked ice milk growing up and still do but it's normally called lite ice cream now with less than 10% dairy.
Today's ice cream just really taste and feels cheap.
I usually make Sherbert and sorbet homemade. 😋🍓🍋🍊
