Today I want to share with you how to make the best barbacoa de res, traditionally it is made out of sheep, or goat it is slow-cooked over an open fire or, more traditionally, in a hole dug in the ground covered in maguey leaves, since I don't have a hole outside my backyard and times have changed, now things are made easier for us to obtain the same great flavor in the comfort of our home! I will be showing you the easiest and most delicious way to make barbacoa de res( because we personally don't like goat or sheep jijiji) you can use whatever your preference is just make sure the meat is high fat content. You can serve in in tacos, enchiladas, burritos or just by itself with a side of rice! Whatever way you choose to enjoy this delicious recipe, I promise you, you will not regret it! Barbacoa is different from birria the consomé is totally different, they are both unique in flavor! 😉

Ingredients: makes about 20-22 tacos
Sear meat with 2 tbsp oil, season with 5 tsp salt and 1 tbsp ground black pepper
4lbs your choice of beef I'm using Chuck roast you can use cheek, beef shank, beef ribs or just any with high fat content
6 chile chipotle im using 8
2 cup beef broth
1/4 cup Apple cider vinegar
Juice of 3 limes
1 onion
5 garlic cloves
4 bay leaves
1 tbsp ground cumin
1 tbsp beef bouillon
5 tsp New Mexico Chile powder
2 tsp oregano
1 1/2 tsp Chile ancho powder
1 tsp salt
1 tsp whole black pepper
1/2 tsp ground cloves or 6 cloves
1 serving of love 💕

I absolutely LOVE barbacoa. But even though I grew up in a semi-Hispanic family, nobody in my family knew how to make it…not even my maternal grandmother who was from Mexico. Well, I got an Instant Pot for Christmas. This is going to be the first recipe I’m going to try out. I seriously can’t wait. My mouth is already watering. 🤤

MUJER! I made this and it came out amazing!!!! Super good! Although a bit salty but sooo bomb! I ended up using 8 Chipotle peppers and it came out perfect but if you dont want it spicy then yes use less. Also my instant pot doesn't have the meat/stew setting but I just used the manual pressure cook button and that work just fine I have the instant pot duo Crisp/air fryer...please give us more instant pot recipes! Even slow cooker recipes...porfas! And thank u for this recipe! IT'S A BANGER.
