No Bake Keto Pecan Cheesecake w/Caramel Topping
Crust:
2 cups pecans
6 tablespoons butter
1 teaspoon vanilla extract
1/4 cup low carb sweetener

Cheesecake body:
16 oz cream cheese softened at room temperature
1 1/4 cup heavy cream
1/4 low carb sweetener
1 teaspoon vanilla extract

Topping:
4 tablespoons butter
1/4 cup sweetener
1/2 cup heavy whipping cream
1 cup pecans

Melissa, I made it and it was so delicious! I had a couple of blocks left of Chocolate almond bark and put it on top! It tasted like turtle cheese cake. I have a sweet tooth and this really satisfies it!

Hey Melissa sorry have been so quiet been fighting to get mine and Hubbies Covid vaccine. Finally got the first one last week and get this I am the one with life threatening illnesses Lovely huh.
