I went to an Indian restaurant in Orlando, FL USA. I'm a chilehead so I figured I could handle "Indian hot" as it was described in levels of heat available to consumers. I barely survived. The hostess, a lovely woman, patted my shoulder in sympathy. One of my companions told me my face was red. Great flavor and pain. I was truly chastened. This video was much more fun.

I had been told that as for Indian recipes, there is NO SUCH THING as “curry”. They have different names for each type mixed spices they use.

Thattakada chicken fry *if done right, one of the best fried chickens out there
Appam and chicken curry, or veg isthu
kalappam and duck curry
Beef fry and parotta
Erachi Varutharacha Curry (fried ground mutton curry)
Fish Fry
kerala prawns curry and pithri
also koopos(likely Arabic influence, a flatbread, i think its essentially pita bread) and chicken curry (but it has to be steamed inside the curry, so it will be soaked and soft... )
Also Kerala Malabari/thalasseri baryani
Kerala Lamb Curry (not sure where you can find this, but this if done right, is one of the best dishes ever... have had it when i was child, but can't find it anywhere... )
chili beef( not sure if this is common, but it was when I was younger...) and parotta

I’ve only been to the thekkady area and mummar area, staying in both the tiger preserve and amongst endless tea fields.
It’s an amazing area with some awesome food.
Though my wife’s family from nearby Tamil Nadu says the food in Kerala is bad, though it’s quite awesome.
They’re both awesome and Indian food is amazing.

The whole country is an amazing place of incredible culture and incredible food.

I can’t wait to go back and get literally double takes from folks in rural areas that have likely never seen a white person in real life.
I loved it there. Except for the bathroom aspects.
