I prefer root beer over coke for glazes. Coke has such a distinct taste that the food tastes kind of like coke. With root beer (especially like a hipster small batch kind that’s really herbal-tasting and less sweet) I find I can add enough herbs and spices and garlic etc to make it just be a sweet marinade that doesn’t taste like root beer syrup

but there's nothing wrong with old garlic. I grow garlic every year and cure it and it forms a good layer of the papery skin. I braid them together and use them all year until I have another crop. Perfectly fine as long as there's no visible mold or decay on them.

In the Philippines, we commonly use Coke or Sprite (along with other spices) to cook shrimp. That's like our version of buttered shrimp (coz Filipinos love sweets, even our spaghetti is sweet).

Old folks also say that fizzy drinks help tenderize the meat. I'm not really sure if that's true, but it does add a nice flavor.

Garlic is almost always old. It is supposed to be. That's why you leave it out after harvesting.

Garlic - my garlic is fresh out the garden and peels super easy if you just chop the roots end off the rest of the skin peels so easily off!

Tomato Knorr sounds interesting. So far I only added sundried tomatoes to bump the flavour up.
