This year Grill Girl grilled a turkey. She didn't use a smoker, so she used wood chips to create smoke in the grill. The best way to get maximum flavor and smoke is to use a packet of dry chips AND a packet of chips that have been soaked for about 15 minutes.
Then, place the packets directly over whichever burner is turned on.
Your food should go over the burners that are turned off to give you indirect heat cooking.
These smoking chips provided a lot of smoke for the 3-hour long grilling of the turkey. After cutting, the meat had a nice pink smoke ring and was very flavorful and juicy.
