Italians call this a pastella. Besides the obvious purpose (it's cheaper) it also browns a little slower. So especially for longer fries (thicker cuts of meat/fish or larger spherical objects like arancini) or at higher temps it's actually a little easier to get a nice light golden brown in stead of golden black.

If an egg is too pricey, the Panko breadcrumb is also optional. We can use good old breadcrumb from dried leftover breads, rolls, etc.
