No, this is actually an adjective clause. "When" is in your example is a relative pronoun that stands for "on Monday."

If I say:
"When I see you on Monday, we will do another activity based on Exercise 5, " I am using an adverbial clause with "when" as the subordinator.

One way you can tell the difference is by moving the clause around in the sentence. An adverbial clause can exchange order with the main clause: It is equally correct to say "We will do another activity based on Exercise 5 when I see you on Monday."

You can't do this with the sentence you gave as an example. If you try to move the clause to the beginning of the sentence, you will see that it doesn't make any sense.
