Tender Pork Butt and Juicy Turkey in LA CAJA CHINA Table for Six 6

Thanks for the video - lots of work went into it and I appreciate that. I felt the long time left open at 18:00 -20:30 was excessive and did you no favors. You do spend too much time looking at the meat and basting/messing - looking = no cooking. Foil was needed over the breast at 26:00 - its not presentation at stake here - the skin was off the breast and exposed also the legs were cooked already and needed protection. Thanks again for the video - sorry to crit you. The pork looked great I must say.
