How to Make Zero Waste Cauliflower Polpette (“Meatballs”)

Ever had polpette? 🤤
Our hard/stale bread bag was getting full, so it was time to use it up! One of my favourite ways to eat stale/hard bread is by baking it and grinding it into bread crumbs for “polpette” (meatballs).
I wanted to try a healthier (lower calorie) version of this Italian staple, and found a delicious recipe!
CAULIFLOWER POLPETTE
3 cups cauliflower florets
1 1/2 cups cooked quinoa
1 cup homemade breadcrumbs
2 eggs
Salt and spices to taste
Olive oil to brush on top
1️⃣ Pulse cauliflower and quinoa in food processor until semi-smooth, then transfer to large mixing bowl.
2️⃣ Mix remaining ingredients with cauliflower/quinoa in large mixing bowl until everything is well incorporated. Then form small balls. (I used a 1.5 tbsp scoop)
3️⃣ Brush with olive oil and bake for about 20 minutes.
