Sri Lankan Roasted Curry Powder (makes 100g)

Ingredients

6 tbsp. Coriander seeds
1tbsp. Fennel seeds
2tsp. Cumin seeds
1 tsp. Mustard seeds
1tsp. Cardamom pods
1tsp. Cloves
1 stick Cinnamon
2 tbsp. Red rice
2 tbsp. Desiccated coconut
2 sprigs Curry leaves

Method

1. Heat a saucepan on medium heat and dry-roast coriander seeds until brown then transfer to a separate bowl
2. Then dry-roast cumin seeds, fennel seeds, cardamom pods, cloves, cinnamon, and mustard seeds together until brown and transfer to the same bowl
3. Repeat this step with the red rice and coconut separately and also transfer
4. Lastly dry-roast the fresh curry leaves until dry and transfer to the bowl
5. All the ingredients must be ground to a fine powder

Note:
*this recipe is specifically for Sri Lankan meat curries but can be added to any curry of your choice
*adjust quantities/ratios of ingredients to increase/decrease powder yield
*for a darker curry powder, dry-roast ingredients for longer
