Uses: Vegetarian & Non-Vegetarian Curries
A simple, basic combination of spices, roasted till brown and fragrant. This mix uses a combination of whole spices and powdered spices for convenience and with a coriander base.
Powder. If you want to try out what I used in the video, the recipe is given below.
2 heaped tablespoons Coriander powder
3 Cloves
3" piece Cinnamon bark
1 tablespoon Fennel seeds
3/4 teaspoon dry Chillie flakes
1/2 teaspoon mustard seeds
Use medium heat to roast the ingredients 1 to 5 above.
Keep stirring all the time to prevent burning. After 10 minutes, remove from heat. Add the mustard seeds and keep stiring for additional 5 minutes.
Spread on a plate or flat tray to cool completely. Grind to a powder.
Use as needed for dark color non-veg or vegetable curries in Sri Lankan cuisine.
Use sparingly as homemade spices and curry powders are highly potent compared with commercially produced, store-bought curry powder.
