The most amazing Sri Lankan curry powder, this unique curry powder has a host of beautiful herbs and spices, dry roasted to deep dark brown perfection. Possibly the most fragrant thing you will ever smell. Used to mainly to cook meat curries, as its strong flavour is consumed by the meats perfectly.

Make sure you dry roast each ingredient separately. This way each spice gets it's own time to deepen its individual flavour. Patience is key and the end result is absolutely worth it.

## INGREDIENTS

coriander seeds – 1/2 cup
fennel seeds – 1/8 cup
cumin seeds – 1/4 cup
fenugreek seeds – 1.5 tsp
white rice - 1/2 cup (soaked in water for 1 hour, then drained)
desiccated coconut – 1/2 cup
dried Kashmiri chilies – 2
curry leaves – 1 stalk
Ceylon cinnamon – 1 stick
star anise – 1
cloves – 2
green cardamom pods – 2
black mustard seeds – 1.5 tsp
nutmeg – 1/4 a piece (grated)

## METHOD

1. In a heavy bottom pan / frying pan gently dry roast each ingredient (except for the mustard seeds and nutmeg) on a medium to high heat. You will need to do this one spice at a time as they will roast at different speeds
2. once they reach a deep dark brown colour remove them from the pan onto a plate and keep aside
3. once all the spices are roasted add them all back to the pan. Add in the mustard seeds and grated nutmeg and gently warm through
4. put the mixture in to a blender or a spice grinder and grind until a fine powder, you may need to do this in 2 batches
5. store in a air tight container until needed. This blend will store for a few months

Amazing Josh!! Thanks for this, I have all the spices in, but never done this mix with them. Will get onto creating a curry with this powder over the weekend 👍😋
