You should really mention muslim Indian cuisine. Because generally Indian is assumed to be hindu cuisine which is mostly vegetarian. And muslim indian cuisine is basically from muslim culture like Persian Afghan Uzbek and turk and arab cuisine which is added Indian flavours kinda indianised spiced up muslim cuisine

Just because Pad Thai has the word “Thai” in it doesn’t make it national dish. We don’t actually classify particular dish as national dish but Pad Thai is among the popular Thai dishes. If one wants to choose what dish that best describes Thai cuisine I would say look to the curry dishes, like Green curry, Massaman, etc. Then again different dishes may famous in each of our regions. Yellow curry (Kang Lueng, Kang Tai Pla) for Southern part, Kao Soi for Northern, etc. Too many to pin one dish as “national” dish.
