Poached egg on avocado toast is one of the most healthy options for breakfast with cherry tomato & basil pesto on the side. Celebrate ur Sunday with flavours full of health & taste.

Serves: 1

Ingredients -

2 sourdough bread slices
1 egg
1 avocado
1/2 tsp chilli flakes
1/2 tsp vinegar
1/2 tsp lemon juice
1/4 tsp paprika pwd
2 tbsp feta cheese
2 tbsp extra virgin olive oil
Salt
pepper
2 cherry tomatoes
Water

Process -
Mash an avocado and add salt, pepper, chilli flakes & lemon juice and mix.
Strain the egg to remove the watery part.
In a pan heat up some water and add vinegar.
When water starts to simmer, swirl the water in the pan in a circular motion until a whirlpool form. Gently slip 1 egg into the center of the whirlpool.
Cook it on a medium flame for 2-3 minutes.
In a pan, drizzle some olive oil & toast bread slice from both sides.
Spread avocado on toast & place poached egg.
Add cherry tomatoes & basil pesto on the side. Drizzle some extra virgin olive oil on tomatoes.
Sprinkle feta cheese, salt, pepper & paprika powder.
