No, distilled water will NOT make your espresso taste flat. It will allow you to taste the coffee itself, not altering the flavor with extra minerals. Ever had french fries without salt or ketchup? Try it. THAT is how french fries are SUPPOSED to taste. I love it. As well, distilled water will allow your machine to run for (in my personal case) 8+ years without ANY parts failing or needing replacement. We've owned our Breville Barista Express BES870XL for 10 years and never needed to descale it or repair or replace ANY parts. Not even the group head seal! Fresh roasted coffee beans (a week old or less; I roast my own in a hot air popcorn popper), freshly ground, will produce the absolutely SMOOTHEST shot of espresso EVER! As in, NO bitterness! All the coffee flavor without the bitterness! Absolute bliss! 😁
