Hellmann's mayonnaise would have tenderize it and the meat will fall off without u cutting.

Dont really need the mustard as a binder...everyone does that, they say irt does not add flavor but it does. try this, let the butt sit and sweat. Once it sweats you awesome seaming's will stick and set. Yo want ssome great bark add some brown sugar i do mine after it sweats then add the dry seasonings. ytry that and report back.
