Easy Lemon Loaf Cake 🍋 | WW friendly (Weight Watchers) This easy to make, moist and soft lemon cake has a fresh citrus flavor that is perfect for spring or summer. Weight Watchers Points & Calories/Macros and additional nutritional information Included down below!⬇️⬇️⬇️

Ingredients:
*1⁄2 cup Sugar*(I now use Lakanto Classic no calorie monkfruit sweetener which reduces the points to only 3!)
3 large Eggs
1 cup Plain fat free Greek yogurt
1⁄4 cup Vegetable oil (or coconut oil)
1⁄4 cup Unsweetened applesauce
1 tsp Vanilla extract
1 1⁄2 cups All-purpose flour
1 1⁄2 tsp Baking powder
1⁄4 tsp Baking soda
1⁄4 tsp salt
about 1 Tbsp Lemon zest, zest from 1 lemon
4 Tbsp Fresh lemon juice divided, 2 for bread, 2 for glaze
1/2 cup Swerve confectioners sugar replacement
In a large mixing bowl or mixer, add the eggs, sugar, and yogurt. mix until smooth. Add oil and applesauce and mix again. Zest and juice your lemon. Add the lemon zest, 2 Tbsp lemon juice, and vanilla extract then mix again. In a separate bowl, add the flour, baking powder, baking soda, and salt, stir until combined. Slowly mix into moist ingredients, and mix until just combined, don't overmix. Some lumps may still remain. Pour batter into a prepared 9X5 loaf pan. Bake at 350 for 40-45 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool completely in the pan. To make the glaze, whisk together Swerve confectioners and 2 Tbsp of lemon juice. You can add more juice if you want a thinner glaze. Once cake is cooled, pour glaze over the top.
