Matcha lemon loaf is a delicious and refreshing treat that combines the earthy flavor of matcha green tea with the bright citrusy taste of lemon. This loaf is perfect for breakfast, brunch, or a snack.

Ingredients:
1 lemon
2 tbsp lemon juice
½ cup softened butter (room temp)
1 cup sugar
1 tbsp lemon zest
2 tbsp cooking oil(vegetable or canola oil)
2 eggs (room temp)
1 ½ cup all purpose flour
*1 tbsp matcha powder
1 tsp baking powder
½ cup milk (120 ml)
Glaze:
⅓ cup icing sugar or confectioners sugar
2 tbsp lemon juice

Note: Increase the amount of matcha powder to your liking. I reduced mine due to global shortage. More matcha powder, more flavor and color. For the milk, you can use dairy or non-dairy milk. I used oatmilk for this recipe.

Procedure:
*If you’re baking this in the oven, preheat it to 180°C. Skip this step if you’re using an airfryer. For the airfryer, use the bake setting to make it easier.
1.)Squeeze lemon and zest using a microplane.
2.)In a bowl, add sugar and lemon zest. Mix and rub together the sugar and lemon. Add butter and infuse the sugar and lemon together.
3.) Add cooking oil, mix using a whisk. Whisk until it’s light and fluffy.
4.) Add 2 eggs. 1 egg at a time. Whisk every added egg. Add lemon juice and slowly whisk again.
5.) Add the dry ingredients: sifted flour, matcha, baking powder. Dry ingredients should be sifted to avoid clumps.
6.) Mix together till no flour is visible. Add milk and whisk.
7.) Transfer to a loaf pan lined with parchment paper.
Bake in the oven: 170°C 50-55mins for Airfryer: 160°C 45-50 mins. After baking, let it cool down for at least 2 hours
8.) After letting it cool down, make the lemon glaze by mixing icing sugar and lemon juice. Pour on top of the lemon loaf. Enjoy!
