A Simple Lemon Loaf Cake

This cake is pleasantly-moist and fabulously-fragrant. It's very easy to do. All you need is a bowl, a whisk, and a loaf pan. Thanks for watching. Please subscribe and tap the bell icon for more delicious recipes. Ingredients are listed below:

Ingredients for one 9- x 5-inch cake:
For the loaf pan:
Baking spray (or butter and flour) for greasing

For the cake batter:
3 large eggs
1 cup sugar
1 cup sour cream or Greek yogurt
1/2 cup neutral-tasting vegetable oil
The grated zest of 1 lemon
2 tablespoons lemon extract
1 1/2 cups self-rising flour (see note below)

For glazing the cake:
1 cup confectioners' sugar
Fresh lemon juice -- enough for desired glaze consistency

Bake at 350°F for 50-55 minutes.
NOTE: To make your own self-rising flour:
For each cup of all-purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon table salt. Whisk to combine.

Happy Birthday to me! Today is my birthday and I am now 72 years young! As is usual for me now, my thoughts go out for the many people I have known who were not so fortunate. I have been truly blessed. You and these video presentations are a HUGE blessing to me! I'm going to make this lemon cake for myself to enjoy later today when I will be having afternoon tea.
