How It Works | Dry Cured Ham | Food Documentary

Culatello is similar to prosciutto but is made from the filet or loin of the hind leg. It is cured primarily with salt only and aged in a beef or hogs bladder as a casing to prevent spoilage and contamination.

All people who are grossed out by this, you are missing some of the greatest tasting food humans have ever made.

I am always so amused when I see comments from people that have never given any thought as to where the food in the grocery store comes from! LOL

Although this video disses Parma Ham as "mass produced", genuine 24-months matured Parma Ham is not to be missed. Delicate, fragrant, and delicious.

pigs are not gross. They are only dirty if their pen isn't cleaned. We raised them. They slept, ate and went to the bathroom in separate areas of the pen. They are also very smart. They are not kosher.

The people in these comments are hilarious... No one has ever gotten sick from eating culatello I can assure you that.

What do you mean you're not going to make bacon and sausage of this pig because it's going to be ham? Don't you know that bacon and sausages come from a different cut of meat?

There's a shop in Seattle that sells premium salumi, including culatello. Their culatello is very salty! But it's good. Is it worth the price? That depends on your tastes (and your income). I think it's one of those things you should definitely try at least once, if the opportunity arises.

I work in a Kroger deli and I got bored expecting this to be about the mass-produced ham we have to slice for old people every day. I wasn’t expecting something artisan from Italy😂

"It's time for the chop"
Cuts to a pool of blood with pigs screaming in the background.

Probably could have made that part without cutting it like a horror film. lol

The world's oldest dry-cured hams are probably the Spanish and Italian ones because of the Roman influence.

Why no video of the slaughter and butchering?? That is a very important aspect
