Hey just wanted to let you know that matcha and green leaf teas are better to be made with 80°C water not boiling 100°+, brown leafs like hojicha on the contrary are better with boiling water

Then when you whisk it first you have to do it back and forth to make big foam and then you do it in a W shape until there is no big bubbles, just tiny shinning bubbles, it almost looks like satin.

I'm a traditional matcha barista in Japan so I hope this helps :)

One other thing, don’t put boiling water over the matcha otherwise you burn it and you get a bitter taste, no more than 80 degrees is the right temperature
